Hefeweizen Co2?

Post by Keith » Sun Jan 05, 2014 10:42 pm

I've been looking on the forums and across the internet on the correct CO2 volume for a Hefeweizen. BCJP style guidelines say "High" carbonation, but don't provide a Co2 volume range. Some sites say 2.8-3.4, and I see others say 3.5-4.5 volumes of Co2, and others are in between those.

Most of my beers so far have been carbed around 2.5 volumes. I would consider 3 high and 4.5 excessive. I've also had bottle bombs in the past and don't want to revisit this again, but want to stay in the style.

I was thinking 3/4 cup dextrose to my 23L batch would be suffice and provide adequate carbonation. These will be carbonating at room temp, approx. 63-65Fahrenheit, and my calcs say it will put me at 3-3.1 volumes. Any input on this would be appreciated. :cheers2: The mess from the last bottle bomb was unreal lol.

After using brewers friend, it's saying for the style I should use 1-1.5 cups. I've trusted this site in the past. I think I'm going to go low on their scale at 3.3 volume of CO2 and add 1 cup and up it from my .75 which by that calculator would put me at 2.8.
