Ginger Beer?
I have always wanted to make an alcoholic ginger beer, I tried following the recipe from the book wild fermentation and ended up with a bunch of moldy bottles. (it involved fermenting ginger root with wild yeast and adding it to a sugary gingery liquid. Not my cup of tea.
just hashing it out...
OG 1.060ish
pilsner, 1 lb vienna
25 IBU bittering addition
1/2 lb-1lb cane sugar
unknown amount of ginger in the last 10 minutes of the boil. (1/2 lb?)
Fermenting with us05.
Any suggestions on ginger amounts? I want a strong warming ginger bite.

Chalmers and I brew a Lemon and Ginger Wit beer and have good success with it. We treat the Ginger like hops, so the later in the boil the more ginger snap. We have been having good success with just using chunks of ginger but this time we put it in a magic bullet and made ginger slurry for our additions. We use 2oz ever 15 mins in the boil (about a pound in 5 gal) . We'll let you know how the slurry turns out this time.

and the lemon? just add the juice at the end?
I was planning on magic bullet but maybe a slap chop would be enough
I'm hoping to start brewing it in a couple days so maybe we can trade a pint in the fall.

My mother made hugely alcoholic “ginger beer” when I was a kid. She knew a famous biochemist, who taught her how to “double ferment” it. I used to take a gallon jug of this “ginger beer” on the carrier of my bike to the disco in the seventies (I was 16), and we all got drunk on it on a regular basis. It would be passed down the line of my friends. Sometimes they had trouble lifting the gallon plastic jug to their mouths because they were too sloshed. It tasted very dry and quite awful, but was very alcoholic. This was in the UK.
One night I spent my one and only night in a police cell, with the door open, and it was only because they found me outside the disco on the verge of being unconscious and didn’t know who I was. A Bobby with his tall helmet took me home in the morning in a blue Morris Minor police car and my parents received a verbal warning. Those were the days! That seventies music and young love!

Ps. You’re not related to my mother are you, with your interest in alcoholic ginger beer? She’s from Jersey, one of the Channel Islands, small British islands of the coast of France, Her brother was the keeper of Gorey Castle. He had the biggest front door key EVER. I think what the unruly Habs fan is trying to say is that I'm a fan of the Toronto Maple Leafs. Last time they won the cup was 66-67 season. Not exciting. The lemon ginger wit sounds interesting. If be interested in a ginger pale or cream style ale, something with a bit of bite like Maritimer described.
