Dry hopping with whole hops
How much volume should I expect to lose from absorption, if any?

Well, you are going to lose some for sure, but I was never to worried about the ratio to worry about it. I have your carboys BTW.
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter.
