Spirits Yeast

Anybody use bourbon or scotch yeast to make a beer? Seems like it could be interesting or a disaster.

You'd be looking at a turbo yeast since bourbon and scotch both start out as neutral grain spirits. Not sure it would do much good for your beer to be honest. No more than a wine yeast would.

I figured it wouldn't be good. I was listening to a brew strong podcast from white labs and they mentioned their spirits yeasts. White labs website says they can be used for high gravity beers. Just wondered if anyone has used them.

I'm guessing they'd be meant to ferment out pretty neutral.

they are distilled with a pot still though, not column one, so they retain character from the mash. i've read some conflicting info about using turbo yeast in those specific applications, some say no problem, others say not to.

i'd say go for it and report back with results! i agree with jeff that it would likely finish pretty dry tho
