Sweetner for Adult Rootbeer

Post by 2Ores » Tue Nov 11, 2014 10:40 pm

So looks like, smells like, and tastes like my rootbeer venture is comming along real nicely.
To put it simply, its a bunch of dark liquid malt, molasses boiled using spices instead of hops (cinnamon and the like) with a saison yeast for fermentation (rootbeer extract to be added pre bottle).
Now problem is, when it comes time to bottle it won't be sweet as rootbeer should.
Way I see it is I have three options:
1-Over add a sugaring agent at bottling time
2-Add an artificial sweetner that won't ferment
3-Lactose

My concerns,
1-I like my hands, don't want bombs. Would pasteurization work/how does one pasteurize with a stove top and large pot
2-Not sure how the artificial sweetners will taste. Anyone have experience with this?
3-I and my partner in crime are lactose intolerant. Honestly I'm just going to veto this option for our benefit

All the best,
Chris

Lactose will add sweetness and creaminess without fermentables.

Edit...sorry I missed ur line about lactose intolerance

you could always experiment some at home, just dissolve some sugar twin (and whatever others you can get your hands on) in some water, then see how it affects the taste. Use the same water for each, so thats constant, and maybe regular sugar in one for a comparison, then see which you like best
Kegged:
Bottled: Chocolate Orange Stout, Barkshack Sparkling Ginger Mead, Cherry Berliner
Fermenting: Fruit (havent decided yet) Lambic
Considering: Imperial Chocolate Raspberry Stout, Fir Tip Ale

How are you carbonating the root beer? If you were force carbing the beer, I wonder if you could add some potassium sorbate, like in a wine kit to kill the yeast, then back sweeten? I don't actually know if this would work.

Stevia could serve as a potential sweetener. I've seen it discussed as an alternative to lactose a number of times.

Doing an experiment with Xylitol as a back-sweetener in cider right now. So far I am very pleased with the results. The sweetness is very similar to regular table sugar, and supposedly it is not fermentable.

Available at bulk barn. Good luck!

I think I'll test this out, see how it interacts with basic sugar water and yeast. Make sure it won't affect bottle conditioning, along with taste. Thanks for the idea

Yeah, several candies in europe that are sweetened with it. They are not quite Haribo sugar free gummy bears level, but very very potent.

Quantity, pretty sure I could power the space shuttle with the quantity after eating one small box of the candies!
