Grilling Time/Temp Chart

Hi folks,

Everytime I get the grill going, I find myself searching the net for grilling times/temps/final temps for whatever meat/cut I'm grilling. Does someone have a definitive chart that I could reference with the most common meats that they rely upon? Whether online, or in a book I could buy?

I cook by feel and temp. Direct grilling requires more attention than indirect.

Buy a good instant read thermometer.
If you buy thicker cuts or bone in cuts it takes longer, so buy a pork chop at sobeys and its done in 10 minutes get one from Costco and it could take 45

Ask for done tips the usda has a decent link but they're paranoid about trichinosis

USDA lowered their recommended temp for whole pork cuts to 145F (63c). Pork is so much better now.

Canada has had pork at 145F for a while - took the US a long time to catch up.

I do have a nice thermometer, but wanted to know what sort of ballpark times and temps to use. Direct/indirect I understand, does High = 450-550, medium = 350-450 and low = 250-350? (from http://www.weber.com/weber-nation/grill ... -hand-test" onclick="window.open(this.href);return false;)?

High and medium are kind of subjective, and I go by feel. High is where the hair on the back of my hand singes and/or burns off. Medium I can hold my hand over for a few seconds.
