Quick & Easy BBQ'd Side Plates/Appetizers?
What are some of your favorite quick & easy bbq'd side dishes/appetizers?

Do you mean veggies as well? They are my main side.

I'll list some of my favs here. Without a doubt, the baby boy-choy is a A+ recipe. If you can't find shitakes, use portebellos, or can go without as well.

Asparagus is awesome. Doesn't need long at high heat, 5-6 minutes. In almost all cases, the veggies should have a light coat of oil. Search for grilled asparagus, it's great finished with lemon, pancetta, capers, pesto, balsamic, garlic, butter, etc, etc....
This recipe is great. If you can't find basil, use SS pesto.

Roasted peppers are awesome. Scorch them good on the skin side, let cool and peel, and serve with balsamic vinegar, and myabe a bit of oil if you like, or goat cheese.
Corn takes on a new life on the grill. Here's a recipe I plan to try this week:

Ratatouille is great on the grill. There's lots of different versions, but the main thing is to get a big pan (Big Eric's, Cash and Carry, etc), and get the veggies on there to pick up a bit of smoke character, and maybe caramelize a bit (although that can be a fine line to walk when cooking with the lid down). Finish on the stove top if need be. Really great dish.

- Grilled Caesar salad is wicked good, fast and easy
- Fire roasted tomatoes stuffed with just about anything
- Skewers of garlic cloves
- Bacon
- Asparagus, string beans, carrots; most veggies are awesome on the grill
- Stuffed mushroom caps, portobellos topped with cheese are amazing
- ABTs
- smoked casserole-type things; mac'n cheese, beans, sheppards pie
- 'Stirfry' veggies on the grill
- Elote - grilled corn is great with a variety of toppings.
Elote Recipe:
In one bowl mix the following and adjust to taste. (this is actually good on a lot of things).
3 tablespoons fat-free mayonnaise
2 teaspoons fresh lime juice
In a second bowl mix:
2 tablespoons finely grated Parmesan cheese
1/2 teaspoon chili powder
1/8 to 1/4 teaspoon cayenne (I like the 1/4t )
1/4 teaspoon ground cumin
1/8 teaspoon seasoned salt
When the corn is ready, paint on some of the lime mayo, then sprinkle some of the seasoned cheese on. Stuffed with cheese, topped with diced bacon, hammered with balsamic

The carrot salad was a run of the mill Moroccan type, I think I used this one. Carrots were sliced instead, and i upped the cumin to 1 tsp, and added 1 tsp ground coriander, plus the cinnamon.:

Potato salad was from Tabasco. I smoked the potatoes, used a combo of regular tobasco and chipolte (the green wold be great too). And then I upped the flavour a bit with a good dose of banana peppers. I most likely started lighter on the mayo too. IIRC the recipe is a bit heavy.
