An interesting recipe. I think I shall try this.

Recipe: Rose’s Bircher muesli for two

100g/31/2oz oatmeal

1 tbsp crushed golden linseed

1 tbsp crushed malted barley, or rye flakes

100ml/31/2fl oz milk (or apple juice)

100ml/31/2fl oz yogurt

1 tbsp runny honey

100ml/31/2fl oz freshly squeezed orange juice

1 tbsp hazelnuts, toasted in a dry pan and chopped

1 dessert apple, quartered, cored and thinly sliced

To serve: extra milk or yogurt

Preheat the oven to 190C/375F/Gas mark 5. Spread oatmeal, linseed and barley out on a baking tray and toast for 20 minutes. Leave to cool. (The oatmeal can be toasted in advance and stored in an airtight jar.) Combine the milk or apple juice, yogurt, honey and orange juice until smooth. Add the oatmeal and soak for up to an hour. Stir in the hazelnuts and apple – it will be thick at this stage. Serve with milk or yogurt.
