That's a loaded question! I'd suggest calling ahead. I can buy it here most places including SS and Sobeys but we have a pretty good Asian contingent always looking for it, supply and demand. Rinzlers in Moncton stocks bellies and have the best prices I've found anywhere.

See how this works. If you don't have a proper cheesecake pan (3" minimum sides), I'd consider a 10" pan if you have one. Cake rises pretty high in the oven. Also, don't be afraid to add another 10 minutes to the cook time if the cake is too jiggly. It should be somewhat jiggly, but not crazy.

Crisping up some pancetta to garnish the beer, spinach and cheese dip I'm making for tonite's meeting. Gruyère and Emmental going in for cheese, haven't decided what type of beer yet.
