I just cured it in the fridge for a week, then rinsed the cure and dried it over night, then smoked it. About three hours at 150, then brought it up to 225 over the last hour or so. Then cool it in the fridge overnight and slice.

Epic homegrown grassfed steaks (supplied by HP - thanks, fucker!) with heirloom vegetables and port reduction....
English bacon (whole loin, not smoked)....
Hot (~350 f) and fast (20 mins) smoke on a whole cut up bird for soup.... These 2 went down for a low'n slo 6-hour smoke....
Silly-expensive dry-aged boneless ribeye... Craving a little charrrr on the expensive fucker.... It was great, but.... not that great
SPICY smoked 8 oz balls, pulled @ 130 f.... Served in a fried bun with marinara, bocconcini, basil, cilantro, grana...
And.... SPICY-as-fuck red curry....
