Great looking chicken. I love the indirect setup on the Primo. Maybe I'll have to ditch the Vision for a Primo ... But I'd also need to find a new place to live! :lol:

I'm not a big fish eater, but every now and then I get a hankering. Went with halibut today after being unable to bring myself to face up to farmed salmon.

First time planking on the kamado. Turned out okay; could have done to pull it off a few minutes earlier but it wasn't dry or anything. Nothing but a little compound butter (herbes de Provence, salt and pepper and garlic) applied a couple of times during cooking. The way the kamado can hold a rock solid temperature feels like magic.

I guess it was "get to know your kamado" weekend here. First ribs tonight. Firebricks for indirect, apple and cherry chips for smoke (need to find chunks, but chips are what what I had). Made a couple of mistakes but nothing that led anyone to complaining.

Pics are pre- and post- sauce. Recipe was dirt simple: 2-hour apple juice marinade, then nothing but salt and pepper, on the grill and sprayed with apple juice every 1/2 hour. Smoked pretty close to 5 hours mostly at 200-225. Rested for a little while to grill veg and meat alternatives, then sauced with an ancho/apple sauce and grilled at 450/500 for 4 minutes a side or so.

I could not decide what to smoke today while brewing a Citra SMaSH, so I went to Pete's and this is what I came up with.....they all turned out pretty good:

Bacon Wrapped Cornish Hens
Duck Legs
Bacon Wrapped Jalapeno Peppers stuffed with Jalapeno White Cheddar and Haggis

First time I have ever ate Haggis sober was today, has anyone smoked with Haggis before? The texture turned out pretty good and the jalapeno pepper gave it a nice spicy flavor, even the wife ate it which was a little shocking. I used hickory chips, smoked the fowl until ~165F IT, I brined the night before, my rub was 3 parts Kosher Salt/Black Pepper/Garlic Powder and 1 Part Cayenne. :smoker:

I was too hungry and my hands were too messy to get any internal shots of the birds, the hens were really juicy and the duck legs were tasty but really fatty.

Can't say I've ever tried haggis, but if I were going to, bound up with cheese in a jalepeno and wrapped in bacon sounds like a pretty stellar way to do it.

LeafMan, do you make your own sausage or is that bought? It looks awesome.

I could not come up with a good reason why I shouldn't smoke haggis, it is probably not for everyone but it tasted pretty good. :drool:

CT Vission was on crazy sale last year but is only 16" dia.

The Costco Vission is quite a bit larger.
