I also use a weber charcoal kettle 22 ". Using top and bottom vent controls and minion method charcoal I've gotten some outstanding results. A word of warning though you have to keep a close eye on it and be ready to adjust on the fly. This can result in higher then normal beer consumption because... what else are you going to do when sitting beside a smoking grill? Some day, hopefully soon... I'll break down and buy a WSM weber smokey mountain... just set it and walk away... won't be as much fun but will save trouble with wife.

So I looked into this smoker a little more after I was talking to you at the H&T today. If you add the smoker to your cart, it gives you the option for fedex ground shipping @ $132. A little better than the $400 they want for the fedex international economy.

I've got to get something, that's for sure. The $130 shipping definitely makes it more attractive!

Well, it was a rub with sugar in it that someone raved about online somewhere :lol:

Typically I don't use sugar in rubs because it pretty much eliminates smoke-rings but some people say they like the caramelization on the bark so thought I'd give it a whirl. I didn't really find it made much difference other than a little darker colour and less smoke-ring :cheers2:

Thats exactly what people do. They smoke for an hr or so then rub it but why bother going through extra steps for no gain, that sort of thing is a complete waste of time to me. If I want a smokering AND to use a sugar rub I'll hit it with Tenderquick just before the rub :D

I've been using the Chris Lilly method:
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
For the pork shoulder rub
1/4 cup dark brown sugar
1/2 cup white sugar
1/2 cup paprika
1/3 cup garlic salt
1/3 cup kosher salt
1 tablespoon chili powder
1 teaspoon oregano leaves
1 teaspoon cayenne pepper
1 teaspoon ground cumin
1 teaspoon black pepper
-----------
Pork injection
3/4 cup apple juice
1/2 cup water
1/2 cup sugar
1/4 cup salt
2 tablespoons Worcestershire
------------
1 whole pork shoulder (approximately 16 pounds)
1 bottle Big Bob Gibson Championship Red Sauce (or substitute your favorite BBQ sauce)

Inject pork shoulder evenly with injection solution. Apply a generous amount of rub onto meat. Pat so the rub will adhere. Place in a smoker and cook with indirect heat for 16 hours on 225°F. Serve with sauce on the side or paint shoulder with sauce the last 20 minutes of cooking. When done, the pork should pull off the bones easily. The internal temperature of the pork should reach 195°F.
I have been taking out all the salt, and if I don't have apple juice, I'll use mango nectar, or whatever I see in the fridge that looks appropriate.

Edit: I see you said brisket, d'oh. I haven't injected my briskets.

I did one before, I used a blend of Worcestershire sauce, beef stock and bourbon, it was good but not sure if it made that much difference, next time I'll only inject half of it to see...

They are so efficient they pay for themselves in fuel savings plus it's a lifetime appliance so you aren't running out every few years for another grill of some sort. I save a lot on electricity too since I don't use an oven or stove anymore. I bake, roast, grill or smoke everything with the little beast. Buy 40 bags or so of charcoal in the late fall when it's on sale for less than half price and I'm stoked for the year :lol: :lol: :lol: That's just the beginning.... the real advantage is the flavour of the food off of these things, it cannot be emulated by any gasser or other type of metal charcoal grill. Something like a Weber kettle or stick burner can come close on low and slow real bbq but it's still considerably different, they require huge airflow to maintain a similar temperature so the end product is different.

I was skeptical about the flavour of the food being better but bought one anyways for all the other benefits, oh and the smokin' deal I got on it!!! :lol: Now I tell the same thing to other people most of whom I'm sure don't believe it but it is oh so true. X will tell you the same thing I'm sure :cheers2:

Yeah.

I must admit, before Nash befriended me the Primo XL, I thought the idea of spending that kind of coin on a 'bbq' was kinda excessive. But after a few grills, the gasser was headed for the in-laws. And I am now the proud owner of the most expensive grill on the planet. :crazy:

Actually can't tell if that's the silver or gold model but regardless they run about $125 - $200 new, and the cooker is worth a good something to brewers, or use it to deep fry turkeys....
