The WSM is a little harder to control than an egg, it's more affected by wind/rain/whatnot since it don't have much insulation or thermal mass - it's pretty much just a big metal can.

I picked up a cheap temperature controller for mine (BBQ Guru PartyQ) and haven't looked back. These days I'll load the smoker up with pork late at night and go to bed, top up the charcoal in the morning, head to work, come home and pulled pork for supper.

Like Gary said, it's a bit more finicky than the kamado due to the lack of thermal mass. However, I have done overnight cooks with this, lasting 12-14 hours on one load of fuel, with little to no adjustment after the first hour. It's all in controlling the airflow. I don't have a controller, just a temp monitor.

I also have the Vision kamado and that will go 13 to 14 hours on those low and slow cooks without adjustment and still have TONS of fuel left. Nice thing about the kamado is that its versatile - low and slow to hot and fast.

Looking good. Guys next to me had a great tasting sauce. They were adding both Mango and some kind of hot sauce (they kept hiding that in a brown paper bag!)

Pretty good. I'll get my peeps to confirm when they get back, lol, but it's a real long lasting aroma at low and slow. After 4 hours, still getting big nose off those 3 small pieces.
