I don't make soup often, however made a Bok Choy soup (First time using this). Turned out well.

I bought it not knowing what to use it in. Gave me a reason to cook up some soup! Tastes awesome I must say.

I usually steam it with citrus and eat it like that with butter, or use it in stir fry. It looks awesome in your soup!

I'll have to try that sometime. Do you eat the white or just the green, I only used the green this time as I wasn't overly sure.

If it's fresh and tender enough you can eat it all. I grab and break, like asparagus, and if it breaks harshly through away the bottom bit.
