That steak really takes away from the carrots.
Looks tasty, cooked perfectly!

Technically this is from last weekend but just getting around to posting pics. First crack at smoking a duck - didn't take any photos after I carved the damn thing, but the pizza is from the following night, and then some stock made from the carcass.

40 days, it's from the loin I did a while back http://www.brewnosers.org/forums/viewto ... 075#p76112" onclick="window.open(this.href);return false; . There's some seriously intensified beef flavour in them, really, really good. It tastes sort of like old skool roast beef that was slow-roasted for 6 or 8 hrs to the point of being black and falling apart only in a med rare steaky stateLeafMan66_67 wrote:That ribeye looks incredible! How long was the dry aging?

Pork belly is taking some hickory smoke for some bacony holiday treats. Half with maple pepper, the other with maple Chipotle.

Finally convinced the other half that the Blichmann burner was a good investment. 25lbs waiting for a hot water bath!

Virginia won the 25lbs of lobster so it's a bonus for Christmas. Bacon, lobster and smoked cheese will be given away as gifts.mr x wrote:I should be coming out to your place, lol...

Not really doing much to dissuade me, lol.
Some Luigi. This was labelled as picnic, but looks a bit better than that. Probably give it some smoke for a few hours then blast it. This was not well planned...
