Technically this is from last weekend but just getting around to posting pics. First crack at smoking a duck - didn't take any photos after I carved the damn thing, but the pizza is from the following night, and then some stock made from the carcass.

There's some seriously intensified beef flavour in them, really, really good. Pork belly is taking some hickory smoke for some bacony holiday treats. Half with maple pepper, the other with maple Chipotle.

Some Luigi. This was labelled as picnic, but looks a bit better than that. Probably give it some smoke for a few hours then blast it. This was not well planned...
