These come in an elastic mesh that usually tries to take half the awesome bark with it when trying to 'peel' it off after a low'n slow so it needs to come off...

Re-tied and injected with Chris Lilly's championship injection (sort of), I replaced the water in his recipe with beer then added some Blair's Death Rain Nitro powder and a shitload of fine ground white pepper to it :lol:

Lunchtime!

The injection made a huge impact, it's hot and spicy, and flavourful, awesome. Total cook time was about 13.5 hrs @ 230 F :cheers2:

I am finally getting around to processing some photos from the summer. I'm dating a veggie these days so I don't think I have any pics of big tasty cuts marinating away in fantastic sauces, but I hope that doesn't matter. I eat more meat in the winter anyways, so those will come another time I am sure.

Bacon, mushroom and aged Cheddar tarts cooked in the cast iron oven at a buddies cottage. Can't take credit for the tarts, but I certainly can take credit for how quickly we ate them.

Pair and blue cheese stuffed portos, cooked on the BBQ. I don't have a photo of it, but typically when I cook these I drizzle on a bit of port reduction on it to round it out a bit. I tend to buy a bottle of port, reduce the whole thing to a syrup and keep a jar of it in the fridge for just this sort of occasion. Apparently I didn't have it this time, still great tho.

Everything in here is from my garden, except the wine and (some of) the spices. I typically do this in foil on the BBQ to get a bit of the Maillard reaction going to add some caramel, but the best pic I have of it is in this casserole dish.

This is a cake my girl made earlier in the spring. 5 layers of goodness with strawberry cream alternating between chocolate and cake.

This was my birthday cake, again made by Emma. The white stuff is like a white chocolate torte. Tick, rich, amazing.

Ok that's the maximum allowable attachments. The rest will have to wait, I should be working not drooling. I will try and focus on better photos to share in the future, currently I just snap a few quick ones at things I want to remember.

I always post my photos here, to this forum. That way the pics are here, forever, as long as this forum is here. If the photo host moves, shuts down, changes domain or if you accidentally go to clean out old pics from the host that are linked here, they are forever gone from this forum and you're left looking at a bunch of white boxes with x's in them. Same thing with links, they are fucking useless after they've been removed from the host site so I always make sure to paste the entire article as well as the link to the original. :cheers2:

I'm with you on this one. I hate finding an topic of value on a forum, only to discover that all the pictures are no longer working. I don't know how many DIY topics I've come across, and all you see is the image hosts error image :thumbdown:

I will up the number of allowed attachments, I never realized the forum had a default max.
