They were very good quality and turned out fantastic. Simple rub and glazed with maple syrup at the end. Silverskin left on. I've been doing that lately, and I think it has been helping the ribs stay juicy. We ate too much though, lol, just about knocked us out hahahaha. Chicken wings didn't help. This was a pretty tasty recipe, surprisingly not that hot:

Any rub applied to the underside of the ribs when you leave the silverskin on? I've been thinking about giving that a try as well.

They don't do things small here ... just helping out today. Tomorrow is my turn to show the Americans that Canadians can BBQ too ... I have to figure out how to get 15 racks of ribs and another 15+ pounds of chicken thighs through that Traeger in 6 hours tomorrow. Pig roast was great - cooked at a bit higher temp than I would have expecetd (375 degrees or so for 6 hours) but still really good! They also did 35 pounds of round roast to just beyond medium rare ... really good day.
