HP, you may not need to smoke longer. Assuming you smoked it long enough to cook the pork, smoke hotter. Smoke a log like that at ~ 325 F or so indirect to target internal temp. Good work on the weave! :cheers2:

Laid da smoke to a kg of Balderson for mac'n cheese, threw in a ball of Dragon's Breath, half a growler of smoked black lager, a shit-tonne of roasted garlic and a lb of double-smoked ham and bacon with some habanero mustard sauce.

Non-baked test plate.... doesn't look like much but it's epic.
