Just skimmed through the topics and I don't think I saw any pork ribs discussions (if it's been covered my apologies). Any interesting ways to cook them out there? I think they're on sale at superstore this week. I've made some decent ribs with combinations of grilling and roasting but they've never come out amazing. So how do you guys cook ribs?

At 225-275f on a ceramic komodo.
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:

Be careful of the ribs at SS this week though. At least at the store here in Amherst, they looked really hacked up and poorly butchered. I much prefer CostCo's Ribs myself.

Mine go 5 hours at 220 to 230 on my WSM. Glazed 3 times over the last hour, rest 20 minutes before cutting.

Like Jeff said, watch superstore ribs as they are hit and and miss. Costco always gives me great results.

SS has OK ribs in HFX but far from cooker ready. You need to trim and scrape to get a decent rib.

I use a Weber kettle as low as I can keep it. But I have finished in the oven.

Cook them on what you have and look to upgrade as you go.

I've had the other experience with ribs. Costco was far inferior to SS, but I stopped buying costco after that, so it could have been a one time only event.

What I find about SS sale ribs is that you get one good looking rack on top, but the hidden one ends up with a lot of shiners. If you can pick racks from the case, no problem with SS. I find costco ribs to be a hell of a lot meatier than any others, and they cook down really tender.

The ones I had were really tough, and by the time they were breaking down to a good texture, they had became way too dry, almost like they were from an old pig. I can't say I've ever had bad ss cryopack ribs.

Yeah, the SS cryopak are usually good because I don't think they're butchered in store.

Like Derek, I've found the Costco ones to be meatier than anything I've found elsewhere.

I've tried Costco ribs a few times and they always sucked so I swore off them a few yrs ago. SS ribs can be good or bad, always good if you know how to pick 'em :lol:

Also, I agree - any store can have good or bad - just have to pick right. Costco probably doesn't like me as I check out at least a half dozen packs looking for what I want!

I grabbed two racks yesterday at SS, cut in house not the cryovac'd USA packs. They're on for $3/lb and the ones I grabbed were ~ $11 so they're almost 4 lbs each :lol: :lol: Me thinks it's a new style, "Country-style Baby backs" or "Baby Back Chops" :lol: :cheers2:

I hear ya! If I had multiple bad product from anywhere it would put me off. I won't buy sides from Costco for that reason, a couple of not so great packs.

As for the 'baby back chops' comment, I couldn't agree more. One used to be able to eat a half rack or more in a sitting. New style ribs is two or three ribs and you're done! :lol: :cheers2:
