Jalapeno Bacon
Has anyone ever tried making a Jalapeno (Nash??) Did it work and do you have a recipe?

I've never done jalapeno bacon. I have used chilies, it takes way more than you think to get the heat in. I'd try it, puree a bunch of peppers, maybe even roast them a little first so they will puree better without adding any other fluid. Try something like this:
3 jalapeno peppers per lb pork
2 tsp Tenderquick per lb
1 tbsp brown sugar per lb
1/4 tsp garlic powder per lb
1/4 tsp ground bay leaves per lb
Whip it all into a paste, slather the pork with it. Seal in a ziplock bag into the fridge between 36 - 40 F for 6 - 7 days, turn once daily. Smoke the living arse out of it. Bring me finished product for testing.

Damn, I should have looked at this before I went to the market this morning. I defiantly would have grabbed some pork.
