Hi there Ladies and Gents!

I joined the forum a little while ago and have been enjoying the banter and the fantastic information. It's amazing the amount of good advice that can come from hands on experience shared in an enthusiastic group.

So my nickname is Ruby, but i'm a "festively plump" bloke with a ginger beard, so don't get the wrong idea! Someone will, and it will be hilarious!

I'm from Scotland and moved to Nova Scotia about 3 years ago. I started extract brewing about 13 years ago but had a big gap until 3 years ago when I started back up again. I'm doing partial mash at the moment and have a double chocolate stout in the carboy right now. I've been having fun putting some recipes together and experimenting with hops and speciality grains. I'm building gear up to start All-Grain and I cant wait! I'm in the process of building a cooler mash tun and a wort chiller. Just need a burner and a brewpot, a grain mill and I should be ready to go!

I'm looking forward to learning a few tricks, and trying some new things.

I've never made a Scotch Ale, and I'm not overly keen on the type. I find them a little too heavy, and not in a balanced Belgian kind of way. Reminds me too much of Super-T, if you remember that!

In fact I have a bottle of Pumphouse Scotch Ale that's sitting on top of the fridge that'll see it's sell by date sooner than it'll see my lips. I'll try and find someone desperate!

For British styles I like the Bitter and the ESB. I like porter/stouts too. What about you?

Ruby, I got into home brewing because I couldn’t find anything like back home …call it national pride or arrogance or whatever, but I missed the ol’ pint of bitter. Those British bitters though are full of adjuvents, just like the North American lagers, to make them easy drinking and presumably to reduce cost also. After going back to the UK last year, I realized it was the real ale thing I was missing, and I developed ways to make real ale at home. I don’t do that so much these days as I have been sending to competitions for feedback. I never really got into making English pale ales. I haven’t lived over there for 30 years, but correct me if I am wrong, the home brew scene over there is very limited, mostly limited to a few traditional British styles, whereas the North American craft beer/home brew scene (which started in 1979, when home brewing was legalized in the US), I find very exciting. All kinds of historical styles have been revived from around the world. A few have been Americanized but that’s ok, because they are brewed alongside the traditional ales. IPA for example was taxed into virtual extinction in the UK, but continued to evolve in the US. My favorite beer I like to brew at the moment is an American Pale Ale. Love the US and Australian hops, UK and german malts, British yeasts.…
