I have been reading thru the site over the last few days and am very impressed with all the great info on here. Soooooo much knowledge. Any questions I have are usually somewhere on the site for a great read. Sorry about the PM I sent everyone a few days ago when I signed up. lol I read thru the FAQ and now see the New Member Intro's so I can now navigate around properly on the site. I am going to try and master the Noble Grape extract recipes, after a year of doing kits and maybe on th AG after that..I am so craving PIZZA after reading that forum...

Its a bit of a drive (just as far to Halifax tho'), but there's a few of us in the Amherst-Sackville area. You're welcome to join us in a brew session or meetings.

You can make great beer with those NG kits. Just don't follow the fermentation instructions too closely, especially when they talk about timelines. Most important is to reach gravities than to worry about not letting a beer sit in primary for more than 5 days (or whatever they say).

Thanks for the warm welcome, tips and invites. I intend on hitting meetings in the future. Lots to learn so I know I'm in the right place. So I thought it would be a good idea last night to try my NG Honey Porter recipe after 5 days of bottle conditioning. Yes I know that is too soon but last night after a few beer it seemed like a great idea. I could taste a flavour I can only describe as one I've tasted from friends who've also done extra recipes. They have let their beer age, use spring water and the flavour is still there and seems the same in different recipes. It wasn't the sweet flavour you get from trying a kit too early it was a flavour I cant describe. Not bad beer but a home brew taste. I use my well water & have had no problems with it topping up Brewhouse kits with 8l & my water is not treated. I sanitize properly and keep carboys covered. I'm wondering what I did wrong? I did the boil and hop addition per the instructions and cooled down wort quickly. It's not a taste of bad beer just one I've only ever tasted with friends who've brewed with malt extract. When I bottle I'm always careful not to introduce air into the wort. Sorry if this sounds ignorant I just cant see me doing extract recipe long if the taste doesn't go away. It has to be something I'm doing. Will the taste go away after further bottle conditioning? ...

It's pretty hard to tell without tasting the beer.

Don't be discouraged. Bring some bottles to a meeting and get people to try it.

The more you brew the better your methods will get and the better your beer will get learning from others on the forum.

Since I've joined this forum and drank many of the other guys brews I've really learned a lot and my brewing process has improved.

U learn little tricks along the way from others and eventually u will be making great beers and less trips to the nslc.
