New Member From Fredericton

Hi All,

It's been 15 years or so since I've brewed so it's time to get back into it!
I've poked around the forum and it looks like there are many knowledgeable people on here having a good time experimenting with recipes.

I picked up a Festa Brew Cerveza kit from the Noble Grape here in Fred along with their starter kit to get things going.

From what I can see most people are simply using the primary for 3 weeks or so and not using a secondary. My plan was to use the fermenting
bucket as the primary with the air lock attached and not bother with a secondary. Anyone have any suggestions?

Thanks All!

AJ

Your plan sounds solid about skipping secondary. If you are doing the cerveza kit try and ferment it cool (10C - 50F) as it is a lager kit.
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

I think that plan is fine. Do you have a cool area to ferment? I assume the kit come with a lager yeast...
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:

Hello,

I do a single stage ferment for one week only and then into the keg to finish conditioning for IPAs. That isn't the norm and it probably depends on the yeast and beer style.

I hope you have fun making beer again.

Thanks everyone!

I'll be using space in my basement workshop which is consistent and cool.
Probably can't get down to 10 but 14-15 is more the norm. I'll see what I can come up with.

Hopefully all goes well and I am planning the Festa Brew Red for my next batch.

That will be fine, it's pretty hard to get the cooler temps in the summer.

Got my first batch of Festa Brew Cerveza in the primary last night and have mostly everything else I need to prime and bottle in a couple of weeks.

Need to consume a few more Picaroons this weekend so I'll have enough bottles :D
