Anyone have experience collecting wort from a mash in the evening and boiling it the next day? Ideally I would like to let it sit in my kettle covered (~8-10hrs) overnight and start my boil in the morning. I've read mixed reviews online but most ppl said it was possible but there is a risk of infection and possible souring.

I did this a few times but I chilled it pretty fast and boiled the next morning. Didn't notice any sourness. Keep things as sanitized as possible afterwards.

I've not done this, but with a coleman xtreme 70 I used to do overnight mashes. Some of the best IPAs I've made came from doing this...

What kind of mash did you do?

Single infusion, always aimed for around 152 f and let it ride overnight. Ran off and boiled in the morning. Always produced a nice dry beer.

Can you fit your pot in the fridge? Or this time of year leave it outside. I've done it once and it was fine

Do it. I mash 5-6 hours all the time. With my geto rig I wrap my pot in a winter coat and sleeping bag and only loose 5F during that time. When is comes to brewing try it. I've found allot is stuff in brewing is bullshit. If it makes your life easier do it. I do afternoon mashes and ferment in the kettle. I'd never go back.

This is what I was thinking. Are you mashing in a cooler? What's your temp loss like?

I've mashed all afternoon before, but not overnight. I wouldn't have a problem doing it though. I'd use a thinner mash to fill the dead space in my cooler, but I'm not sure what your setup is like. Bugs won't grow until you're below 60c. Hence the temp drop question.

I don't currently mash in a cooler (I do eBIAB now) but when I did with that cooler (Coleman Xtreme) I'd lose a maximum of 4-6 degrees over roughly 8 hours depending on environment outside of the cooler.

I don't see it wouldn't work. Id say go for it. the mechanics of brewing never change, just the systems and methods, and if it makes your life easy why not ! half the joy of home brewing is experimenting.

Some people collect their wort first, bring it just to a boil, kill the heat, and cover for the night. Start the boil again the next morning. This should pasteurise the wort. I've done it this way at least once, and have done overnight / all day mashes too.

I do that too, what Rob said, if I have to split up my brew day into two parts.

I do full volume mashes in a cooler so I'll be trying this for my next brew. I'll let it sit in the cooler over night.
