How does previous experience in a dairy make one more qualified than Joe Schmo off the street?

Dairy tanks and equipment are basically the same as brewing equipment...

OK, so you've got lots of stainless steel tanks and hoses moving liquid around, but I think a cheddar flavored ESB would be gross. :)
