Lambic and other oak-aged beers, such as the one being examined here by Jean Van Roy, head of a traditional Cantillon brewery in Brussels, are set to dominate the craft beer market after recently being on the edge of extinction. Australasian brewmaster Brian Watson predicts a sour beer renaissance across several styles.
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:
