I'm looking to do something nice for a friend who did me a huge favor recently. He is a huge fan of Grolsch beer, so I've order some WL850, and plan on trying to so Grolsch-esque beer, and bottle it up in the classic green bottles.
I've found some recipes which are essentially Pilsners, but I'm curious to know whether anybody here has tried this before, and what their results were?

I have not brewed this recipe. I've have done a blonde ale before with 100% Viking Pale Ale Malt and it very much had that European malt or Grolsch flavour. Here is a link that may help you:

Grolsch has similar flavour/aroma profiles to most European light lagers, so concentrate on the Pils malt . I'd say keep the malt bill simple and concentrate on noble European hops and proper yeast/fermentation and your friend should be happy. They should have patience though, lagers take time at low temperatures to ferment and mature. I have a dutch pils recipe from an old home brew book (circa 1994) as follows:
19L:
3kg pils
.68 kg flaked corn
0.6oz Norther Brewer bittering hops 60 min
1 oz hallertauer flavour hops 30 min
0.5 oz hallertauer flavour hops 15 mins
0.5 oz hallertauer aroma hops 0 mins
Total IBUs 33
color: 2-3 srm
OG: 1.045 - 1.049
FG: 1.008 - 1.012
Personally, I'd only use 100% Pils malt or just 1% of Munich at most and follow the hop schedule above getting to the total IBUs around 30 - 35 using Hallertauer or Saaz. Use fresh pils and fresh hops. There's not much else going on in there so it all should be fresh.
My 2 cents for what it's worth!

Since you're going through the effort to make a low abv lager (I assume you're making a starter or pitching multiple packs) you should end up with a nice clean yeast slurry after this ferment that would make a great re-pitch into something more substantial like a standard German Pils, a Bock or Dopplebock. Use the Grolsch as a yeast building beer.
