Don't do step mashes. I heat the mash water to temp, keep the Burner running during mash in. Then kill heat and stir til I reach mash temp. Normally instantly.

drinking a pint of old cardinal from granite. Interesting, certainly no major off flavors, but I don't know if I'd buy a full growler of it again. Not exactly what I was expecting from something purported to be a belgian dubbel - it's quite sweet, lightly "woody" almost? loads of fruit esters, no real phenolics or other more "belgian" character. I think they may make this with the same ringwood yeast they use for their english stuff but just push the ferm temp to get more esters?

My Hop Assault IIPA from the first advent. This is Version 2.0 with Columbus, Simcoe and Amarillo. I scaled it down to a 7.0% IPA. Pretty damn happy with this.

Drinking a White Noize IPA from up street that I picked up at Bishop's Cellar on Friday. That's a lovely white IPA. Plenty of hops, no distracting bubblegum (that some white IPAs have depending on yeast). Hogie and his boys have made a fine beer with this one. Also looking forward to trying the Rhuby Social later tonight.
