But these are just serving issues. UK casks are still going to suck just as bad if you don't serve them right. So unless you are bringing in great beers from England, there's lots of NA beers I think you could/should look at AFAIAC.

Not JUST serving issues. Breweries and brewpubs on this side of the pond don't seem to know how to fine the beer and condition it properly. Cask does not mean cloudy. Unfiltered, non-pasteurized live beer can be bright. Kevin Keefe knows how to do it (but doesn't seem to bother too much with trying to get many cask accounts), and so does the guy at the Windsor Arms.
But agreed about beer quality. There are some very unremarkable UK cask ales. I do want to see mainly NA beers, of course. But I would enjoy the odd UK beer as a special treat for beer geeks who love that sort of beer. I'm not suggesting everyone should prefer what I prefer. Far from it. But say once a month, and an annual fest. I'd be thrilled.

I'd bet my house and your farm that the vast majority of cloudy beers served on cask are the result of the casks being manhandled, which is still a serving issue to me. Beer's will clear without fining, although that can help, and should speed things up. Cask conditioning a beer isn't that hard, it's as basic as you can get really, just get down a few bung basics. I think a case could be made that cask issues on this side aren't due to brewing issues. Admittedly I haven't been to too many cask bars, but I have heard at least one story of a very well known cask bar in this country (which shall remain nameless to avoid oversensitive people getting bent out of shape for reading something on the internet that they didn't like regardless of whether it was true or not, lol) handling casks like a martini shaker before serving. The rest I can fill in from doing my own cask conditioning. I find it hard to believe that breweries that couldn't cask condition a beer would be competent enough to stay in business. According to their website they are closed Tuesdays, on Sunday open 11am-11pm and every other day 4pm-2am. These hours are much like Volo's

Same hours as Obladee. Aiming for a similar clientèle I suspect. For years I seem to recall that Volo was closed on Sundays, so I'm surprised to see the early open for that.

I wouldn't be surprised if it's simply avoiding the downtime between the lunch and evening crowds where you'd still have to pay wait-staff. Neither Obladee nor Stillwell from what I can tell aim for the dinner crowd, they aim for the evening crowd. Bars rather than restaurants. So they're picking the best windows for their target crowd. Seems to have worked for Obladee, though like you, I've rarely been. Got an invite to the soft opening, have only managed to make it back once. It's not that I don't want to support it, just that I'm not really their target customer.
