Your "Go To" Brew? What is your speciality?

I'm new to this, so I do not have one yet... But I am super partial to a great stout so that is what I would like to make my "speciality".


What is everyone's go to brew? What do you like brewing the most, and what do you get the most compliments on?

Pilsner. Brew it and forget about it for a month or two. I brew Session ales the most because they are quick to brew and taste great fresh.

IPAs / pale ales. My goal is to have a regular IPA or pale ale on tap at all times along with a specialty IPA (milkshake / white / Black, etc).

But I also try and embrace the diversity of the hobby and try not to limit myself to those categories. Variety is the spice of life .... kind of idea.

That’s one of the reasons I like the competitions. Forces me to learn about a style and brew something I might not otherwise think of having on tap.

I like drinking pale, hoppy beers, but for brewing I've managed to produce better quality beers and more consistently when I brew dark and malty styles. British and Belgian dark always seem to turn out amazing.

Belgians are my specialty and I plan to do them professionally. It’s the style that actually sold me on the idea of brewing, first brew I did was a Leffe clone. Been brewing for about 7 years I guess now and I’m still on the hunt for that perfected Belgian Homebrew.

Any chance I get to enter them in Homebrew comps I do even though I know I could probably brew something that’s more likely to win or score higher.

Always try to have a Saison on tap, but haven’t got the exact profile I love in a good commercially produced saison.

Also having something hoppy on tap and then another that is a good “food” beer, kolsch, Pilsner, helles....pretty much anything German!

I wouldn’t call it my go to, but the best beer I have on tap is usually my American porter. I have four beers on tap so I usually like to have that on, plus an IPA, something easier drinking and a something else.

I get the most compliments on “Midnight Slider”, a Smoked Baltic Porter recipe I developed a few years ago and have been tweaking ever since. It’s not like most smoked beers insofar as the smoke flavour doesn’t dominate but rather compliments the rest of the malt character. It’s got a lot going on. Besides smoke, it offers notes of dark fruit, biscuit/bread, chocolate, roast, caramel, toffee, and coffee. It is intended to weigh in at 8% but I’ve only managed to get it to 6.7% at the highest. To that end, it’s also adequately hopped to balance which gives it a bit of hop-bite. It’s name is also somewhat controversial...a free bottle of Midnight Slider to the Brewnoser who can tell me why

I get bored of the same beer over and over...so I'm always brewing something different. Taste seems to change with the seasons for me...however there is typically a sessionable IPA of sorts on tap. My hands down favorite style are pilsners though.

I've got an oatmeal stout called "Troglodyte" that is my usual go to. I've usually not had that great of luck with IPAs, but will be incorporating a closed transfer soon.

I am currently in the process of making a Kern River Brewery Citra Double IPA clone, and just from my taste tests alone I can tell this is going to be probably be my "go-to". Like, if none of you have ever tried this recipe go brew it this weekend and thank me later.

I've brewed the Kern River Citra Double IPA clone on many occasions. It's comfort food in a glass. Even well received by non IPA fan it's that good so I couldn't agree with you more. As for my go to beer it's gotta be an American IPA with a balanced hop bite. I'm a happier man with something hoppy on tap.

My go to beer to make is a Hefeweizen. 40/60 wheat, hallertau hops, ferment at 16c. I've made at least 8 kegs of it so far. I think I'm going to start mixing it up though and try out some other noble hops
