Muskoka yeast strain?

Post by jtmwhyte » Wed Nov 26, 2014 5:30 pm

Picked up a 6er of Mad Tom IPA and it's now advertised as unfiltered. Any idea what strain it is?
Nova Prime Taproom
Tap 1: Festa Brew Scotch Ale
Tap 2:
"Fill with mingled cream and amber,
I will drain that glass again.
Such hilarious visions clamber
Through the chamber of my brain -
Quaintest thoughts - queerist fancies
Come to life and fade away;
What care I how time advances?
I am drinking ale today." ~ Poe

I'd like to try to harvest it, but I have half a brick of US -05 coming in the grain pickup

My guess is likely s-04.

I'm not sure i could tell the difference between S04 and S05 in a side by side but my guess would be S05 / california

Now i want to do a side by side with these two yeasts...

They centrifuge their beer now and depending on the quality of the centrifuge it may be tough to get a good starter population.

I find that US-05 gives a cleaner finish and accentuates bitterness more than S-04 which rounds out the bitterness and provides some traditional fruity British esters. The only reason that I can tell the difference is that before I had my conical, I used to split my house IPA fermentation with 5 gallons with 05 and 5 with 04. Otherwise, I'd likely never be able to tell the difference.

That's a great way to do it Jeff! I was thinking about doing the same thing with a 10 gal batch of my next ipa with California and s05
