Schooner

I just returned from a vacation in Nova Scotia. Great province! I was surprised that a beer like Schooner is not on tap like other brands. Unfortunately, I can't buy it here. Would anyone have a recipe for Schooner so that I can brew it here for myself.

I'm not sure what would be in that one. It's inbev - light, probably 15ish on the ibu's, few percent C10, 35% rice/corn/syrups. Lager yeast. That's where I'd start anyway. IMHO, it can be easier to buy macro beer instead of making it yourself.
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:

IMHO, it can be easier to buy macro beer instead of making it yourself.
While this may be true, brewing something this light in color and flavor can be challenging and can also be useful to help highlight any general problems you may be having in your brewing process. Off flavors will stand out like a sore thumb in beers like this.

Here is a recipe that ressembles Schooner beer. Its called Sailing.

1/2 liter of dextrose
1 3/4 liters of pale malt
1 1/4 liters of maltose syrop

Bring to boil

Add bittering hops

20 grams of Perle
5 grams 0f Irish moss

Boil 30 minutes

Add aromatic hops

5 grams of tettany

Boil 10 minutes

Add water for 23 liters of beer

Add 2 packages of lager yeast

Add 1 1/4 cups dextrose for carbonization and bottle.

I would appreciate if you add your comments to make this brew more authentic if it is off.

Are you measuring grain in volume? I'd add weights here so we can help out. Also what temperature are you fermenting at with lager yeast and what type of yeast are you using?

It is pale malt extract syrop. The yeast used is Saf lager s-23 made by Fermentis. All I am told is to let it cook at a mild rolling boil for the required time.The beer should then be fermenting in a cool room. The ideal temperature should be between 12-15 degrees centigrade or 53 - 59 degrees F. Only 190 - 200 grams of dextrose should be used for carbonization instead of the 1 1/4 cup that I mentioned earlier. I hope this helps.
